Meatloaf and Chinese Dinners

Tonight I decided to try my mom's recipe for meatloaf, which I've eaten (and if I remember correctly, liked) many times under her cooking. Our experience was not so great.

I'm not sure if I didn't cook it long enough, or what, but the meatloaf was soggy and ... just didn't taste quite right. Whatever it was, Paul decided that it needed to be eaten with bread, and after putting it into the oven for another half an hour, he ate it with some hamburger buns quite happily. I couldn't stomach anymore :)

All I have to say about this experience can be summed up in two short sentences:

1) Not sure if I'll be making this again anytime TOO soon ...
2) Glad that Paul is not a picky guy!!

However, I do have one thing to recommend ... we tried out some of Trader Joe's Frozen Mashed Potato Pellets (sounds funny, I don't think that's the actual name) and they were delicious, easy to cook, and cheap! If you can, try them out from your local Trader Joe's...


This whole meatloaf ordeal reminds me of when I tried to make Chinese food a few months back. It did NOT turn out. In fact, it was so bad, I think even Paul didn't want to eat it and we ended up going out to Taco Bell! It might have been all the ginger that the recipe asked for ... or maybe the honey ... either way, it was gross :) 

The moral of the story is, I think I'm basically good at two genres/types/country's foods:
1) Italian
2) Mexican

The rest I fear, just seems not to work too well ... 

Any funny stories out there that any of you would like to share? Come on, I know we've all cooked a bad meal at least once :)

I have a really good individual meatloaf recipe. You make it with ground turkey and spinach. It's super good. Oh and I also have a stir-fry recipe that probably isn't considered "chineese food" but is really good too. Both recipes are really easy! I'm glad you got a blog!! We need to hang out soon.
